Scandinavian Christmas Craft Projects and Recipes.

It has been such a busy past few months. I have been a terrible blogger. I know- I admit it. But things have settled way down with the completion of our home renovation and I'm ready to jump in. 
I decided that rather than submit my book proposal to the publishers I would put the projects and recipes on my blog. This way everyone can  enjoy them- for free! It was such a labor of love to put everything together and although the prospect of diving back into the world of craft publication was exciting I think it would be in my best interest, and would much nicer, to share. I'll try my best to get as many of them on my blog before Christmas but I'm sure there will be some that don't quite make it before then. Enjoy!!! 

Basic Waffle Cookies( Krumkake)
4 eggs
1 C. sugar
1 ¼ tsp. almond extract
1 ¾ C. flour
¾ C. butter, melted

     Mix all ingredients together well. If batter is too thick add one Tbsp. of milk at a time to desired consistency.
    Spoon a heaping tablespoon of batter into a lightly greased electric Krumkake iron. Let cook about 1 minute and 20 seconds with the heat set on a 3.
     Remove from iron and immediately roll onto a wooden cone, using a lint free towel to protect your fingers.
      Press firmly to seal the edges. Let sit on cone for about 20 seconds then carefully slip off cone and cook on a wire rack.

     Fill with sweetened whipped cream just before serving.
Note: Use vanilla and cardamom in place of the almond extract if desired. These are traditionally served with sweetened whipped cream, and lingonberries or lingonberry jam.

Sweet Whipping Cream
1 C. whipping cream
1 Tbsp. powdered sugar
1 tsp. vanilla
 With a hand mixer, beat the whipping cream on high for about 1 minute.
Gradually add the powdered sugar and vanilla and beat until cream thickens.
Note: Use immediately if possible.
