Aebleskiver Recipe

Aebleskivers are so yummy! Especially dipped in melted butter and sugar. This recipe is not for wimps! Fat and carbs- enough said! 
Danish Aebleskiver Recipe:

Makes 35 Aebleskivers

2 egg whites
2 egg yolks
2 C. flour
2 tsp. baking powder
1/2 tsp. baking soda
1 Tbsp. granulated sugar
1/2 tsp. salt
4 Tbsp. butter, melted
2 C. milk
1 tsp. almond extract
Lingonberry Jam
Canola oil for greasing the pan

Heat Aebleskiver pan on low to medium heat while mixing the ingredients. Beat egg whites with a hand mixer until you get peaks. Set aside and in a separate bowl mix together the flour, baking powder, baking soda, sugar, and salt. Mix well. Add milk, melted butter, egg yolk and almond extract and mix until blended. Gently fold in the egg whites. Using a pastry brush, oil each cup with a little bit of canola oil. Fill each cup about 3/4 of the way full and let cook for about 3 minutes. Flip half way over with the wood skewer and cook for about 1 minute. Turn the rest of the way over and cook another minute or two. Serve with warmed lingonberry jam or melted butter and sugar.
