Bring on the Lemon!

Oh my goodness do I love lemon!!! Lemon cake, bread, cookies, pudding! Lemons smell amazing and are so versatile! This time of year always gets me excited about lemons. Not just because they taste good but are so healthy as well. I love using lemon essential oil for cleaning and for removing stickers, adhesive and oils from around the house. I have boys- therefore I have lots of stickers, adhesive and oils. I have numerous summer birthdays I  have to plan for and I'm always looking for creative gifts to give to my family and friends. This year I am doing tin buckets with yummy lemon goodies inside. I love the galvanized tin buckets from Ikea. I have a lot of them around the house. They are really inexpensive and great for organizing. I filled the buckets with a yellow crocheted wash cloth, lemon essential oil, homemade lemon extract, a flour sack towel and some citrus tea. I do love a THEME!!  I will probably end up doing orange buckets and mint buckets as well. At Christmas I did vanilla extract and it was a huge hit!
Supplies for the bucket:
Tin bucket (Ikea)
Lemon essential oil (available from
Floursack towel (grocery store)
Herbal citrus tea (available from Amazon)
Yellow dish cloth- make or buy
DIY lemon extract (bottles available from Amazon)
DIY Lemon Extract:
Wash lemons well. Quarter your lemons. Remove the fruit from the peel. Cut into 1/4 inch strips and remove all of the pith from the peel with a small paring knife. You are just using the zest. Add the peels to the vodka in a mason jar making sure the vodka covers the peels completely. I let mine sit for several months before I use it. When preparing it for gifting I discard the old peels add new ones to the individual 2 oz. bottles. I think it's purdy! I usually forget to shake my extracts as they sit yet they still seems to turn out beautifully. Who has time for that?

Lemon Bread

 1 ½ C. flour ½ tsp. baking soda

½ tsp. baking powder ½ tsp. salt

3 eggs 1 C. sugar

2 Tbsp. softened butter 1 tsp. vanilla

1 tsp. lemon extract 1/3 C. lemon juice

½ C. vegetable oil

Preheat oven to 350 degrees. In a large bowl combine the flour, baking soda, baking powder, and salt. In a separate bowl blend the eggs, sugar, butter, vanilla, lemon extract, lemon juice and oil. Pour wet ingredients into the dry ingredients and mix until smooth. Pour into a well greased 9x5 loaf pan and bake for 45 minutes. Cool completely.

Lemon icing: Mix 1 C. powdered sugar with 2 Tbsp. milk and ½ tsp. lemon extract. Drizzle on top of the bread once it has cooled.
