Healthy Coconut cookies (no bake)

This is a very simple recipe for some healthy coconut cookies I like to make when I need a treat. They remind me of No Bake (Gorilla Poo) cookies but have shredded coconut rather than oats. Today I tweaked the recipe a little and I much prefer them this way. I love using cocoa powder to get my chocolate fix as it is free of sugar and fat. And a little bit goes a long way. Controlling myself and not eating every last one of these cookies is so hard!

Coconut Cookies
1/3 C. Raw honey
2 Tbsp. Cocoa powder
1/3 C. Coconut oil
1/3 C. Almond butter
1 tsp. Vanilla
2 heaping cups of coconut flakes, unsweetened


Put the coconut flakes in a food processor and pulse about 10 times to break up the coconut a little.
Bring the honey, cocoa powder and coconut oil to a boil in a saucepan over medium heat. Boil about 1 minute and remove from heat. Stir in the almond butter and the vanilla. Mix well. Stir in the coconut and mix well. Drop by tablespoon (or use a small ice cream scoop) onto a baking sheet lined with parchment paper or waxed paper and chill until cooled.
