Whole Wheat Banana Nut Muffins Recipe- YUM!

I made these vegan banana nut muffins for breakfast this morning and they were delish! I substituted applesauce for the egg and thought they turned out lovely. They whipped up quickly and easily. One bowl banana bread muffins- heck yeah! Enjoy!

Whole Wheat Vegan Banana Bread Muffins
1/3 C. Olive Oil
1/2 C. Honey
1 tsp. Vanilla Extract
1/2 C. Unsweetened applesauce
1 C. Mashed bananas
1 3/4 C. Whole wheat flour
1/2 tsp. Salt
1 tsp. Baking soda
1/4 C. Hot water
1/2 C. Chopped pecans

Preheat oven to 350 degrees. Line 14 muffin cups with liners (I like the Greaseproof, Swedish liners as the muffins don't stick and there is no waste). In a medium bowl mix the olive oil, honey, vanilla, applesauce and mashed bananas together. Add the flour & salt. Mix well. In a measuring cup mix the soda and hot water. Add to the bowl and mix well. Add the nuts and mix until incorporated. Fill muffin cups about 2/3 of the way full. I use my regular ice cream scoop to fill the cups and it works perfectly. Bake in 350 degree oven for 20-25 minutes or until done. I like my tops nice and brown so I bump up the temp to 400 degrees for an additional 6 minutes. Let cool 5 minutes (yeah right!) and serve.
